Ingredients
Date & Orange Muffins
- 220 g almonds
- Zest 1 orange
- 12 medjool dates, seeds removed
- juice 1 orange
- 3 eggs
- 40 g Butter melted, (optional)
- 1 tsp vanilla
- 1 tsp Bi Carb Soda
- 1 pinch salt

Pleace almonds in TM Bowl and mill for 10sec/speed 9. Set aside.
Place orange zest in TM bowl and grate 10sec/speed 10.
Add dates and chop 10sec/speed 6.
Add eggs, juice, butter (if using) and vanilla and mix 5sec/speed 5.
Add remaining ingredients and mix 10sec/speed 5.
Spoon mixture into 12 silicone cupcake moulds, place into Varoma dish and tray. Clean bowl.
Add 500g water to TM Bowl. Set Varoma with cupcakes into position and steam 20-25minutes/Varoma/Speed 2.
Remove cupcakes and allow them to cool in moulds.

Tip
Alternatively you can bake the muffins in a preheated oven at 175 degrees celsius for 20 minutes or until golden and a skewer comes out cleanly.

Thanks for the recipe conversion! These are awesome! I used about a cup of orange pulp I had left over from juicing some oranges instead of the juice and zest and added about 100ml of water. It made 16 muffins for me
