Ingredients

  • 2 2/3 Cup of mixed dried fruit
  • 1 package Glazed cherries
  • 1/2 Cup of water
  • 1 cup of brown sugar
  • 125 grams Butter softened
  • 1 level tsp Mixed spice (ground)
  • 1/2 level teaspoon Bi Carb Soda
  • 1/2 Cup of cooled black tea, Or can use sherry
  • 1 egg, Lightly beaten
  • 1 cup of plain flour
  • 1 Cup of Self raising flour

Recipe's preparation

    Boiled fruit cake
  1. Closed lid"Closed lid" Add the fruit , water , sugar , butter , spice, and soda 

    10 mins Counter-clockwise operation"Counter-clockwise operation"  Gentle stir setting"Gentle stir setting" 100 degrees check to make sure the sugar is dissolved and butter has melted  

    Cool for 10 mins 

    Add flours and eggs . Counter-clockwise operation"Counter-clockwise operation" speed 1.5 for 2 minutes or until,  mixed 

    Place mixture into prepared tin and double line the tin with baking paper . 

    You could place blanched almonds on top if wish 

    Place in a slow oven at about 170 degrees for 50 mins or until firm

    Once cooked leave in tin until cooled then place onto rack

    I would soak the fruit in cold tea for a couple of hours or overnight. This will plump up fruit. Giving it a go.

    There is no instruction as to when to put the cold tea in? I added an extra egg as my usual boiled fruit cake has two eggs. It has turned out to be a bit dry.
