Ingredients

  • 220 gram mashed potato
  • 220 gram sugar
  • 300 gram self-raising flour
  • 230 grams Milk
  • 170 gram Saltanas

Icing

  • 110 grams sugar
  • 1/2 --- Cup coconut
  • 25 grams coconut oil, Mine was solid
  • A few drops of vanilla

Recipe's preparation

    Bun
  1. Preheat oven to 170

    mix potato and sugar 5 seconds, speed 5

    add all ther ingredients and 30 seconds, reverse, speed 4

    bake in a 20 cm round cake tin for 40-50 minutes

     

  2. Icing

    Add remaining ingredients and mix 30 seconds speed 5, adding enough warm water to make a paste if necessary. 

    Top cooled cake with icing

    i used to make this years ago so when i found it to be done in the thermo i was excited and the family loved it so def be making again
    i lined tin with baking paper and cooked it for 45 min and i used a square tin as i like that shape its easier to cut into portions

    Great recipe.  Ideal where you have some leftover mash potato as it is quick and easy.

    the mistakes I made was not to grease the bottom of the tin as it stuck a little, and not to cook long enough.  The skewer came out clean, but because the potato is a bit more dense it looked ok, but the middle of the bun was a bit undercooked.  

    i will definitely make it again
