Ingredients

Brownie

  • 130 g coconut oil
  • 150 g good quality dark chocolate, I use Lindt 70%
  • 300 g caster sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 35 g cocoa powder
  • 40 g Coconut Flour

Recipe's preparation

  1. Preheat oven to 175 degrees. Grease and line a Brownie Tray (approx 30x15 cms)

     

    Mix Caster Sugar, eggs and Vanilla on speed 5 for 3 seconds. (The mixture should be just mixed, don't over mix it or it will turn spongey) Set aside and clean and dry bowl.

     

    Place Coconut Oil and Chocolate in bowl and melt 3 minutes, 50 degrees, speed 2.

     

    Add Cocoa and Coconut Flour and mix for 5 seconds, speed 5.

     

    Add Sugar and Egg mixture and mix for a further 5 seconds, speed 5.

     

    Bake for approximately 20-25 minutes until edges just start to pull away and centre doesnt sink when lightly touched. 

     

    Allow to cool in the tray.

    Sprinkle with icing sugar to serve or serve warm with ice cream or custard for a loving dessert.

    Try to stop at one piece!

Tip

Avoid over cooking this as it isn't as nice if it's too firm. Also avoid over-mixing the mixture as it will turn spongy.

    I reduced the sugar and used 85% dark Lindt chocolate as that is all I had. Slightly bitter but in a yummy way! Delicious gf and df treat with my cuppa tmrc_emoticons.)

    Great tasting Brownie - thanks for a good recipe. Might want to adjust the title however, pretty sure chocolate contains Dairy! Cheers. Wink

    This is the best brownie recipe! I made this on Christmas Day and the whole family were raving about it. I made it because I'm on a dairy free diet & now I have a dessert everyone can enjoy!

    Very nice Chocolate Brownie - I used Green & Black's Organic Dark Chocolate 70% Cocoa which i found gave the recipe a real bitter/sweet flavour so, slice size 'less is more' for me. tmrc_emoticons.)
