Ingredients
Dough
- 2 chewable vitamin C tablets
- 280 g rice milk or almond milk
- 30 g chia seeds
- 75 g water
- 2 teaspoon Yeast
- 400 g Unbleached Spelt Flour
- 120 g Wholemeal Spelt
- 20 g olive oil
- 1 teaspoon Golden Syryp
- 1 teaspoon salt
- 40 g linseed

Mill vitamin C tablets on speed 9 for 20 seconds
In a seperate bowl, mix chia seeds in water and set aside
Add milk and heat for 2 minutes, 37 degrees, speed 1
Add yeast and mix 5 seconds, speed 2
Add all remaining ingredients, including the chia gel and mix 6 seconds, speed 6
Knead "Dough mode" for 4 minutes
Transfer to a Thermomat or oiled bowl and set aside to prove for 30 minutes or until doubled in size
Knock down and transfer to a loaf tin and set aside to double in size again
Put in a COLD oven and set to 200, bake for 30 minutes until it sounds hollow when tapped
Tip
This recipe is a variation from Thermobexta to make a FODMAP friendly, dairy-free, soy-free, egg-free, wheat-free bread. The vitamin C is used in place of a bread improver to make it soy-free. If soy isn't a problem for you, Bread Improver can be used in place of Vitamin C
