- 45 grams almonds
- 70 grams dates
- 20 grams Shredded coconut
- 220 grams Self Raising Flour
- 80 grams oats
- 80 grams raw sugar, You can use less if prefer
- 1 apple, I prefer green but up to you
- 2 eggs
- 80 grams oil
- 200 grams Milk

Pre heat oven to 180 for texas muffins and 160 for smaller muffins.
Add Almonds, Dates Coconut and Apple (cut in quarters) to TM bowl. Place on "Closed lid" and turbo for 2 seconds twice. Set aside.
Add dry ingredients to bowl and mill for 5 seconds on speed 8
Add Milk oil & eggs and mix for 15 seconds on speed 5
Add cada and mix for 5 seconds on speed 3.
Bake for approx 20 mins.

We love this recipe, we use buckwheat flour, 1/2 olive and 1/2 coconut oil, instead of the sugar we add 50gr raisins, add 2 tsp cinnamon, and we use almond milk. Kids 9 and 6 love them! They also love them crumbled into yoghurt!
Any suggestions to replace the oats (I have an oat allergy)? I’m thinking maybe quinoa flakes

re: @Vanessabakes: I tried half coconut oil, half olive oil with good result. Hesitant to use all coconut oil without adding extra egg or milk as I find using just coconut oil in baking tends to result in things being a bit too dry.
Muffin is dense without being dry, and a good balance of sweetness - perfect for breakfast! Used half olive oil, half coconut oil; half raw sugar, half coconut sugar. Wouldn't mind a bit more of a flavour punch so next time will experiment with increased Apple content and some cinnamon.
Definitely a dense muffin but so healthy for lunch boxes........loved them!
Tasted yum. used 2tbsp chia seeds soaked in 2/3cup water for 15min for egg substitute and added some goji berries. Yummo will add some cinnamon next time for extra taste.
Tasty. Added cinnamon as suggested. Toddler has eaten 4 today! Then just stole one off the bench!
