Ingredients
Caramel Mud Cupcakes
- 200 grams White Chocolate Buttons, I use Cadbury or Nestle
- 100 grams Milk Chocolate Buttons, I use Cadbury or Nestle
- 200 grams Milk
- 200 grams Unsalted Butter- Cubed
- 65 grams brown sugar
- 230 grams Thick Caramel Sauce, Refer to Recipe on RC
- 10 grams Vanilla Bean Paste
- 2 eggs
- 150 grams plain flour
- 150 grams Self Raising Flour

- PreHeat Oven to 140 degress - fan forced
- Line Cupcake pans with cupcake liners
- Add White & Milk Chocolate Buttons to Thermomix Bowl, blitz speed 9 for 10 secs.
- Add Butter, Vanilla Bean Paste and Milk to the the Thermomix Bowl, combine 3mins 10 sec, 50 degrees on speed 3.5
- Using spatula scrape the sides of the Thermomix bowl
- Add Brown Sugar and Caramel Sauce, combine speed 3.5 for 10 secs. Using spatula scrape the sides of the Thermomix bowl and Repeat.
- Allow mixture to cool to 37 degrees, then add the eggs - mix speed 3.5 for 10 secs
- Add flours and baking powder, beat 30 secs, speed 3
- Using spatula scrape the sides of the Thermomix bowl
- Beat for 15 secs, speed 3.5.
- Pour batter into cupcake pen and fill liners 3/4 full.
- Repeat until all mixture is used
- Bake 140 degrees for 30-35 minutes.
- Turn trays and swap shelves from bottom to top half way
- Allow to cool cupcakes to cool in pan. Once cool, refrigerate in air tight containers overnight.
