Ingredients

Caramel Mud Cupcakes

  • 200 grams White Chocolate Buttons, I use Cadbury or Nestle
  • 100 grams Milk Chocolate Buttons, I use Cadbury or Nestle
  • 200 grams Milk
  • 200 grams Unsalted Butter- Cubed
  • 65 grams brown sugar
  • 230 grams Thick Caramel Sauce, Refer to Recipe on RC
  • 10 grams Vanilla Bean Paste
  • 2 eggs
  • 150 grams plain flour
  • 150 grams Self Raising Flour

Recipe's preparation

    Method
  1. PreHeat Oven to 140 degress - fan forced

  2. Line Cupcake pans with cupcake liners

  3. Add White & Milk Chocolate Buttons to Thermomix Bowl, blitz speed 9 for 10 secs.

  4. Add Butter, Vanilla Bean Paste and Milk to the the Thermomix Bowl, combine 3mins 10 sec, 50 degrees on speed 3.5

  5. Using spatula scrape the sides of the Thermomix bowl

  6. Add Brown Sugar and Caramel Sauce, combine speed 3.5 for 10 secs. Using spatula scrape the sides of the Thermomix bowl and Repeat.

  7. Allow mixture to cool to 37 degrees, then add the eggs - mix speed 3.5 for 10 secs

  8. Add flours and baking powder, beat 30 secs, speed 3

  9. Using spatula scrape the sides of the Thermomix bowl

  10. Beat for 15 secs, speed 3.5.

  11. Pour batter into cupcake pen and fill liners 3/4 full.

  12. Repeat until all mixture is used

  13. Bake 140 degrees for 30-35 minutes.

  14. Turn trays and swap shelves from bottom to top half way

  15. Allow to cool cupcakes to cool in pan. Once cool, refrigerate in air tight containers overnight.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
