Ingredients
- 5 carrots, about 400g, not peeled, tops removed and cut into quarters
- 120 grams walnuts
- 50 grams Glacé ginger
- 3 ripe bananas
- 185 grams plain flour
- 75 grams SR flour
- 1 teaspoon bicarb soda
- 1 teaspoon mixed spice
- 1/2 teaspoon cinnamon
- 70 grams Pure Maple Syrup
- 4 eggs
- 200 grams vegetable oil

Pre-heat the oven to 150°C.
Place the carrots in the TM bowl and chop for 5 seconds, speed 5. Scrape down the bowl.
Add the walnuts and the ginger and chop 2 seconds, speed 4.
Add the bananas and mix "Counter-clockwise operation" speed 3 for 5 seconds.
Add the remaining ingredients and mix "Counter-clockwise operation" speed 5 for 20 seconds, MC on. You may need to scrape the bowl during mixing.
Spread in to a greased and lined cake tin and bake for 1 hour and 15 minutes.
Alternatively spoon into cupcake cases and bake for 50 minutes.
Ice with EDC cream cheese frosting.

I'm wondering if the oil measurement is correct? It's all l could taste, didn't rise well either, needed sugar
