Ingredients
You will need:
- 2 medium carrots cut into 5cm pieces, ( approx 250g )
- 60g walnuts
- 2 eggs
- 160g raw sugar
- 150g plain flour
- 1 tsp vanilla extract
- 110g oil, vegetable or grapeseed
- 1 tsp Bi-carb soda
- 1/2 tsp mixed spice
- 1/2 tsp salt
Cream Cheese Frosting
- 30g Butter
- 60g Philly Cream Cheese
- 1 tsp lemon rind
- tsp lemon juice
- 230.g icing sugar

Pre-heat oven to 180degrees.
2. Place carrot pieces into TM bowl and chop 5secs, speed 6
3. Add all other ingredients (Except Walnuts), and mix for 7secs, speed 5. scrape down sides of bowl
4. Add walnuts and mix 10secs, reverse "Counter-clockwise operation" , speed 5
5. Pour mixture into well greased 20cm (8inch) ring tin. Bake in a moderate oven for 45 mins or until a skewer comes out clean when tested.
6. When cool spread with plain lemon icing or cream cheese frosting.
To make cream cheese frosting:
Add some lemon peel (without the white pith) and the sugar to the TM bowl, chop 8secs, speed 9
Add butter, lemon juice and philly cheese and mix 10-15secs, sp5. Scrape down the sides of the bowl and repeat for 5 seconds if you need to, so its a smooth consistancy.
Spread onto cake & enjoy.

Thanks for sharing! I added 250g of cream cheese so the cream cheese frosting spread further and was slightly less sweet

Impressed! Easy and yum! I didn't have any mixed spice so added cinnamon instead, (and 90g of oil), but it's the icing that brings it all together! mmmmm! Thank you!

This cake turned out really well. Nice and moist and the topping was nice. Next time I make it I will use the reverse speed on 3 for the walnuts as I like them to be a little bit bigger. Great recipe.
