- 230 grams SR flour
- 115 grams Butter
- 115 grams raw sugar
- 50 grams Currents
- 50 grams sultanas
- 1 egg
- 2 tablespoons Milk

Preheat oven to 160-180oC
Mill raw sugar for 5 secs SP 9
Add flour to milled sugar in TM bowl and mix 2 seconds Speed 6
Add butter and mix 8 seconds Speed 6
Add egg, fruit & milk. Set to closed lid position and combine on Interval speed for 40 seconds.
Using about a dessert spoon amount of dough, roll mixture into small balls, and flatten slightly
Place on tray lined with baking paper. Bake until light brown (approx. 12-15 minutes)
Tip
You could substitute mixed dried fruit or nuts to suit your taste!
Store in an airtight containter.

Delish! A batch of yummy biscuits whipped up in no time. I used mixed dried fruit as my children love the cherries. I cooked mine at 160 fan bake for 12 minutes. Perfect! Will be making these regularly for the lunch boxes.

These are lightest rock cakes I've ever made. The recipe doesn't state when to add the milk, so I added it with the egg & fruit. Makes a decent size batch. Thanks for sharing
