Carrot & Zuchini Slice
- 220 g plain flour
- 1 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 tsp ground cinamon
- 1/2 tsp ground nutmeg
- 1/4 tsp baking soda
- 2 eggs
- 3-4 carrots, medium
- 100 g brown sugar
- 1 zucchini
- 100 g sultanas
- 90 g Light oil like grape, light olive ok
- 80 g honey
- 1 tsp Vanilla ex
- 2 tbsp flax seed meal, optional

Pre heat oven to 180
line a 13 X 9 baking pan with baking paper
mix flour, baking powder, ginger, cinnamon, nutmeg & baking soda speed 4 15 sec
set aside in another bowl
Grate Carrot & Zucchini Speed 5 10 sec repeat until texture you prefer.
Add eggs, sultanas, brown sugar, oil, honey & vanilla to Carrot & Zucchini mixture mix speed 3 20 sec.
add flour mixture stiring just until combined speed 3 reverse 20 seconds. scrape down sides repeat until fully mixed
spread batter into baking pan, sprinkle flaxseed meal over the top before baking - makes the bars less sticky and adds texture.
Bake for 25 min or until wooden toothpick comes out clean.
Slice into bars or square as you prefer.
store in air tight container in fridge.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

This recipe didn't work for us at all and we followed it exactly. I think it was because there was too much oil. When we put it in the oven, it stayed sloppy and had oil all around the edges. We were really disappointed in the outcome, as it wasn't a lot of ingredients.
We refridgerated it over night to harden it up. When we try to scoop it out, it's very sloppy and falls aparat.
I have made these twice now. So yummy. We have omitted the brown sugar completely as found too sweet and we subbed sultanas for dates (chopped). When we added dateswe only added about 50-60g. Was perfect for us. We used chia seeds on top. Its a fav in our house now.
