Ingredients

Muesli Bars

  • 200 grams rolled oats
  • 50 grams Shredded Coconut (or flakes)
  • 110 grams Raw Cashews (or your favourite)
  • 100 grams Dried Fruit (I used Apricot and Cranberries)
  • 70 grams Dates (pitted)
  • 80 grams coconut oil
  • 210 grams honey
  • 50 grams brown sugar
  • 1/2 teaspoon vanilla paste (or extract)
  • 90 grams chia seeds
  • 1/2 teaspoon ground cinnamon

Recipe's preparation

    Steps:
  1. Preheat your oven to 180 degrees.

     

  2. Place the oats, coconut and raw nuts on a large baking tray and bake for 10-15 minutes, stirring occasionally until golden (the coconut might be ready before the oats and nuts). 

     

  3. Place the toasted nuts, dried fruit and pitted dates into the Thermomix bowl and chop 5 seconds/speed 5. Set aside.

     

  4. Put the coconut oil, honey, brown sugar and vanilla paste into the Thermomix bowl and heat 3 minutes/50 degrees/speed 2.

     

  5. Add all the ingrediants to the bowl and mix 1 min/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5 (make sure the mix has combined before proceeding).

     

  6. Spoon the mixture into a lined 20cm x 30cm baking tray.

    (the mix is sticky so I like to use a piece of baking paper on top to push the mixture down and into the corners).

     

  7. Bake for approximately 20 minutes, or until light golden. Allow it to cool completely before removing it from the tin and slicing.

Tip

Note: this recipe was adapted from issue 72 of the Donna Hay magazine.

 

You can use whatever dried fruit, nuts and seeds you have in the cupboard.

 

Coconut oil can be replaced with butter.

    These are fantastic! I had to modify the recipe to include sesame seeds, as I only had 20g of chia seeds.  Didn't seem to affect the outcome. If anything, the mixture was less sticky, so one positive! Will definitely make again, but will try with right amount of chia. Thanks for posting!  tmrc_emoticons.)

    These are delicious!

    I make 2 batches - one without nuts so my 2yo can take them to day care and he loves them, absolutely smashes them! I just slightly increase the amount of coconut and dried fruit to make up for having no nuts. I also use Woolies Homebrand quick oats instead of the rolled oats just because I prefer the texture and it is fine. I've never really liked muesli bars but these are yum and they freeze well.
