Ingredients
Pancake batter
- 100 grams Hulled Buckwheat, or buckwheat flour
- 1 Over ripe Banana
- 1 egg
- 1/2 teaspoon baking powder
- 1 teaspoon apple cider vinegar
- 2 tablespoon raw cacao powder, or cocoa powder
- 150 grams coconut milk, or any other milk
- coconut oil, for frying

Mill buckwheat speed 9, 30-40 seconds
Add remaining ingredients and mix speed 5, 5 seconds. Scrape down bowl and mix again speed 5, 5 seconds.
Heat frypan over medium heat and melt coconut oil. When the frypan is hot spoon your batter into the pan to cook. (The batter is quite thick with coconut cream so if you prefer a runnier batter perhaps add more coconut cream or use a runnier milk)
When the batter starts to bubble on top flip over and cook for around 20-30 sec on the other side. Keep warm in the Thermoserver until they're all cooked and ready to eat.
Top with coconut cream, berries or honey/maple syrup and enjoy!! Yum!!

Tip
If your banana isn't super ripe you may like to add a little of your preferred sweetner - rice syrup, honey, maple syrup or stevia to sweeten a little.
