Ingredients

Chocolate Bean Cake

  • 120 grams unsalted butter
  • 400 grams canned kidney beans, lightly rinsed and drained
  • 1 tbsp Espresso coffee
  • 5 eggs
  • 1 tbsp Vanilla Bean Paste
  • 180 grams Coconut sugar
  • 70 gram unsweetened cocoa powder
  • 1 tsp baking powdeer
  • 1 tsp biarbonate of soda
  • 1/2 tsp sea salt

COCONUT BUTTER CREAM FROSTING

  • 200 gram Coconut sugar
  • 20 gram full cream milk
  • 80 gram Butter
  • 1 tsp Vanilla Bean Paste
  • 1 1/2 tbsp unsweetened cocoa powder

Recipe's preparation

    Chocolate Bean Cake
  1. Preheat oven to 180"C.

    Grease a springform cake tin (20cm) and set aside.

    Place kidney beans, coffee, 1 egg and vanilla into a mixing bowl and blend 10sec/speed 7. Transfer into a bowl and set aside.

    Clean and dry mixing bowl.

    Place sugar and 120g butter into mixing bowl and beat 15sec/speed 5.
    Scrape down sies of mixing bowl with spatula, then mix for a further 5sec/speed 5. Scrape down sides of mixing bowl with spatula.

    Add remain eggs and beat 20sec/speed 4.

    Add reserved bean mixture and combine 10 sec/speed 4.

    Add all remaining cake ingredients and mix 10sec/speed 4.5.

    Pour batter into prepared cake tin then bake for 30-35 mins (180") or until a wooden skewer comes out clean. Set aside cake to cool.
  2. Coconut Butter Cream Frosting
  3. Place coconut sugar into mixing bowl and mill 10sec/speed 9.

    Add all remaining frosting ingredients and combine 30 sec/speed 4. Remove cooled cake from tin, then spread over frosting and place in refrigerator to set for 30 minutes.

    Cut into pieces and serve.
