Ingredients

Baker's Flour 1000g

  • 1000 grams Baker's Flour, - sifted
  • 20 gram salt
  • 100 gram sugar
  • 600 gram water, (room temperature)
  • 16 gram dried yeast
  • 100 gram unsalted butter
  • 300 gram Folding Butter, For Step 2 ** Do not add to dough mix

Recipe's preparation

  1. Roll out between 2 sheets of clingfilm or gladbake to form a square block about 1cm thick and keep in fridge - approx. size of A5 sheet

  2. Mix the flour and 100g butter until completely smooth, add the remaining ingreadients excepted the folding butter and bring the dough together.  DO NOT OVER MIX

  3. Place the dough 30min at room temperature, then in fridge for 30min.

  4. After 30 min, roll out the dough to about 2 times the size of the block of butter

  5. Put the block of butter at one end of the dough and fold over the side of the dough to completely enclose the butter (make sure the butter has been removed from the fridge and has softed BUT NOT MELTING)

    Folding 1 x 1 x 1 (book folds)

     

  6. Roll out the dough into a rectangle three times as long as it is wide. 

    Then do book fold again - fold 1 over 2 and 3 over 1 (which means left to centre & right to centre) then fold in half again.

  7. Rest in fridge and repeat folding action.

  8. Rotate your dough a quarter turn to the right and repeat steps once again by rolling and completing book folds.

  9. Place in fridge another 20 mins until needed and then cut or roll into shapes required.

    If making Cronuts - deepfry at 175 -180 for 2 mins each side.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
