Ingredients

Chocolate Brownie

  • 150 g dark chocolate, Chopped
  • 140 g Butter, Chopped
  • 3 eggs
  • 300 g sugar
  • 1 tsp vanilla extract
  • 160 g plain flour
  • 80 g coarsley chopped walnuts

Chocolate Chip Cookie Dough

  • 200 g unsalted butter, 2 sticks (1 cup)
  • 150 g white sugar, 3/4 cup
  • 150 g brown sugar, 3/4 cup
  • 1 teaspoons vanilla extract
  • 2 eggs
  • 288 g flour, all-purpose, 2 1/4 cup
  • 1 teaspoons salt
  • 340 g chocolate chips, 2 cups (12oz pack)

Recipe's preparation

    Chocolate Brownie
  1. 1. Preheat oven to 190C

    2. Prepare muffin cups

    3. Prepare Chocolate Chip Cookie Dough
    A. Place butter, white sugar, brown sugar and vanilla extrat into bowl, cream mixture for 20 seconds, speed 4.5
    B. Scrape down and repeat 30 seconds, speed 4.5 while adding eggs 1 at a time.
    C. Add flour, salt, bicarbonate of soda and mix 20 seonds, speed 5
    D. Add chocolate chips and mix 20 seonds, reverse Counter-clockwise operation"Counter-clockwise operation" , speed 5
    E. Refrigerate dough for at least 3 hours

    4. Prepare Chocolate Brownie batter
    A. Chop Butter & Dark Chocolate for 10 seconds on speed 5 (scrape down the side)
    B. Melt Butter & Dark Chocolate 4 minutes at 60C on speed 1
    C. Add Eggs, Sugar & Vanilla Extract, mix for 5 seconds on speed 3
    D. Add Flour and mix for 5 seconds on speed 4
    E. Add Chopped Walnuts and mix with spatula.
    F. Pour mixture 1/2 way into muffin tin and place in refrigerator for 1 hour

    5. Once thoroughly chilled, take muffin tin from refrigerator. Use a small spoon, scoop out small amount of chilled cookie dough. Using your hands, shape dough into ball then slightly flatten it into a disk. The disk should be a bit smaller than the top of the muffin tin wells. Gently press the disk into one of the wells of batter.

    6. Bake 17-19 minutes until golden brown

Tip

You do not want to overcook brownies or it will be very dry. Brownies are done when it springs from the side and there will still be wet lumps clinging to the toothpick.

You can substitute any nuts for the walnuts.
