Ingredients

Cookie Dough

  • 130 grams Butter
  • 1 egg
  • 1 level teaspoon vanilla
  • 100 grams caster sugar
  • 100 grams Brown Sugar.
  • 180 grams Plain Flour.
  • 1/2 teaspoon bicarbonate soda
  • 1/2 teaspoon Baking Powder.
  • 1 pinch salt
  • 100 grams chocolate chips, dark

Cheesecake Filling

  • 300 grams cream cheese
  • 1 egg
  • 100 grams brown sugar
  • 1 teaspoon vanilla

Recipe's preparation

    Cookie Dough
  1. place butter, egg, vanilla, and sugars into the mixer bowl.  Mix for 2 minutes/speed 4.

    add flour, bi carb soda, baking powder and salt and mix 30 seconds/speed 4

    remove 1/2 mixture and spread into the base of a rectangular slice tray.  Smooth evenly and place into preheated oven for 15 mins.

    add chocolate chips to remaining cookie dougo and mix 20 seconds/speed 2.  

    remove cookie dough from mixing bowl and set aside.

  2. Cheesecake Filling
  3. place all cheesecake ingredients into mixer jug.  With measuring cup in place mix 30 seconds/speed 4

    sceqpe down sides and repeat.

  4. Assembly
  5. pour prepared cheesecake mixture on top of the baked and cooled cookie base.

    using your fingers place small pieces of chocolate chip cookie dough on top of the cheesecake filling until the top is almost completely covered.

    place into the preheated oven for 20 mi Utes or until the cookie dough topping has cooked and browned

    allow to cool fully and refridgerate 

Tip

Ensure cookie dough base has cooled before adding cheesecake filling

serve with ice cream

    My kids loved this, if you love cookie dough and cheesecake, this is it! I cut back the sugar on the dough and cream cheese, and preheated oven to 180 degrees.

    A nice and tasty alternative, I only used 250g cream cheese which worked perfectly and also cut back on the sugar in base and cheesecake filling.

    As it was a hot day, I put the cookie dough in the fridge whilst the base was cooking. Temperature I used was 180 degrees celsius. I didn't have dark choc chips, so I used milk. The cookie dough.....at least some of it made it on the top!!! My eldest devoured it.....she found it in the fridge!!! All she said was I should just make more NOW!! Thank you. Next time i will halve the sugar down, a bit too sweet for me!!  Cooking 7
