- 400 g raw sugar
- 10 g cocoa
- 25 g Butter, chilled
- 105 g Milk, full cream
- 1/4 tsp vanilla extract

I'm cooking this todayRecipe's preparation
1. Line small slice tray with baking paper
2. Add 400g sugar, 10g cocoa, 25g butter and 105g milk to mixing bowl"Closed lid"
3. Cook 6mins30secs/120deg/sp2 MC OFF
4. Scrape down bowl and cook for a further 35mins/120deg/sp1 MC OFF
5. add 1/4 tsp vanilla extract and mix 10secs/sp3 MC ON
6. quickly pour into prepared tray and leave to set at room temperature, it will start setting as it cools and it sets hard
7. We break into pieces by hand as this is how we have always done it in our home but you could score the fudge as its setting for easier cutting later.

Tip
Store in an airtight container at room temp.
To wash bowl fill with hot water and detergent and let sit for at least 10mins
This wont melt so you can take it out on a hot day to share with friends.
It only makes a small amount but it is very sweet so you will only want a little at a time as a treat (theoretically!)

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Love this just like the old school fudge me and my friends used to make when I was younger but this was so much easier than standing around taking turns to beat it with a hand beater
also did 2 1/2mins speed 4 at the end
this is great, not more standing over a pot to make this. I also Beat on 4 for another 2.5 minutes at the end as it needs it to set properly
Just whizzing this up for the 2.5 mins at the end and fingers crossed it works out like the fudge we used to make
is life!
Has anyone tried doubling mixture in tm5. Did you use same times?? Thanks

Yum just as I remember making it as a kid back in NZ. I remember we had to beat this after cooking, so I turned it onto Speed 4 at the end for 2.5 minutes to thicken it up before pouring. Perfect!
Turned out perfectly. At the end of cooking it was shiny so I whizzed it for a few seconds on 4-5 until it became a bit grainy (as in normal fudge) then quickly spread it. If I hadn't done that I suspect it could have been chewy rather than grainy & well-set.
Not sure where I went wrong followed recipe to a tee yet is sticky and unbelievably chewy like toffee, love the kiwi style fudge from the Edmonds cookbook so would love for it to work for me.
So yum! This is the closest thermomix recipe I've been able to find to traditional hard fudge like I ate as a child. So much simpler than the old stovetop method! Thanks very much!
