Ingredients

Cake

  • 250 grams water
  • 240 grams raw sugar
  • 35 grams cocoa
  • 125 grams Butter
  • 1/2 teaspoon Bi Carb Soda
  • 2 eggs
  • 175 grams Self Raising Flour

Ganache

  • 400 grams dark chocolate
  • 300 grams cream

Recipe's preparation

    Cake
  1. Preheat oven to 150 degrees (fan forced).

    Add water, sugar, bi carb, butter and cocoa to the Thermomix bowl.

    Turn on for 3 minutes and 30 seconds, 80 degrees, speed 2.

    Leave it to cool until under 50 degrees.

    Add eggs, turn on to speed 4 for 4 seconds.

    Add flour and combine on speed 3 for 45 seconds.

    Pour into 200mm lined tin and bake for 35-45 minutes depending on the oven, or until skewer comes out clean. If a few crumbs come out, that's perfect.
  2. Ganache
  3. Add chocolate to bowl and grate on speed 9 for 10 seconds. Scrape sides.

    Add cream and turn on to 50 degrees for 5 minutes, speed 2 or until silky and smooth. You may need to stop and scrape to bowl to ensure contents melt evenly.
  4. Decorating
  5. Once cake has cooled completely you can spread Ganache over cake and decorate. The photo is actually two cakes, sandwiched with Ganache and jam then covered in more Ganache and strawberries!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     If I could work out how to rate, I would give this give stars! This was such a nice, simple recipe for producing a tasty chocolate mud cake. I had a smallish heart shaped cake pan, and one batch of this mix filled it twice so I got two layers at a time.

    Absolutely delicious! My son wanted a layered rainbow cake so I doubled the recipe, removed the cocoa (sub with more flour), and added 1Tbsp vanilla per 1x recipe. Was so lovely and moist, even after a couple of days! Decorated with Swiss meringue buttercream.

    Can I freeze and defrost it with screwing it up?
    Best ever cake ever!Smile I usually panic when I have to make the birthday cakes but was saved when a friend showed me this delicious recipe.
    I have heard that you can freeze cakes before the party to make decorating easier.
    I need to make 4 of the cakes and have about 7 days till they need to be decorated.
    can you please tell me how to freeze the cakes and defrost them without destroying them in the process?Party

    I've made this now more than 50 times in the last 5 years since I used this recipe for my daughter's wedding cake. It's my go to recipe and everyone just loves it! I choose to keep mine in the fridge as it keeps it dense... more like a mud cake...such a hit! THANK YOU!
