Ingredients
ICING
- 225 g dark chocolate, (vegan)
- 230 g coconut milk
CAKE
- 150 g dark chocolate, (vegan)
- 520 g coconut milk
- 1 teaspoon vanilla extract
- 330 g self-raising flour
- 2 teaspoon baking powder
- 200 g brown sugar
- 2 tablespoon cocoa
DECORATIONS
- 1 portion strawberries, hullled and halved
- 100 g Coconut chips, Roasted

1. Preheat oven to 180c
2. Grease a 6cm-deep, 20cm round cake tin. Line the base with baking paper
1. Place 225g dark chocolate (or milk chocolate) and 230g coconut milk into the bowl. Melt for 3 minutes 80c on speed 1 "Closed lid"
2. Set icing aside. Place in fridge to thicken slighty whilst making cake
3. No need to wash bowl before making cake
1. Place 150g chocolate, 520g coconut milk and 1 tspn of vanilla extract into the bowl. Melt for 3 minutes 80c on speed 1 "Closed lid"
2. Add remaining ingredients (self-raising flour, baking powder, brown sugar and cocoa) into bowl. Mix for 20seconds on speed 5 "Closed lid" until combined and smooth
3. Pour into cake tin and bake for 30-35 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool on a wire rack top-side up to cool completely
Once cake has cool completely and the icing has thickened, ice cake. Decorate with strawberries and roasted coconut chips

I made this for my partners birthday last week. I halved the recipe as it is just the two of us, I also added some peppermint essence in with the vanilla for a little extra flavouring. After a couple of days i did find the cake to be a little more dense than when first baked with after heating in the microwave for a few seconds it was nice. I stored my in the fridge and so I think that solidified the coconut milk a little bit. I decorated mine with fresh strawberries

Just a note, I'm pretty sure all types of dark Cadbury chocolate still have milk solids/fat in them. Might want to use Lindt instead.
