Ingredients

  • 125 grams unsalted butter, chopped
  • 250 grams dark chocolate, 70% cocoas
  • 1 tablespoon Instant Espresso Powder
  • 50 grams honey, or sweetener of your choice
  • 200 grams button mushrooms
  • 4 eggs
  • 125 grams almonds, or hazelnuts

Recipe's preparation

  1. Set oven to 180 degrees

    Line and grease a springform tin.

    Mill almonds on Speed 9, for 10 seconds. Set aside

    Place mushrooms into bowl, Speed 7 for 7 seconds. Set aside with almonds.

    Place chocolate into bowl and mill on Speed 9 for 10 seconds.

    Add butter, coffee powder and honey in with milled chocolate. Melt together Speed 3, 45 degrees, for 5 minutes, until fully melted and smoooth.

    Add mushroom and almond meal into the bowl, turn the dial to speed 4, and add eggs one at a time till combined.

    Pour into a lined spring form tin.

    Cook for 50-60 minutes at 180 degrees.

    Dust with cocoa or icing sugar is desired.

Tip

This is a fabulous easter cake. The mushrooms make it moist and just an extra way to add some hidden vegetable to a treat.

    I thought if I can get this past the fussiest eater in the house, I'll be very happy.
    I'm pleased to report, master 12 loved it!
    I used Cadbury dark melts which worked perfectly for me. It's a keeper, don't hesitate to make.
    Thanks for an awesome recipe with hidden veg.

    Delicious! No one could guess the secret ingredient.  The consistency is a bit like a fudge cake.  I used a 200 g block of chocolate I had in the pantry and the cake came out fine.
