Ingredients
Chocolate Tart
- 60 g raw sugar
- 225 g plain flour
- 30 g cocoa powder
- 150 g Butter, chopped, chilled
- 2 egg yolks
- 1 tbsp iced water
Lemon Butter Filling
- 1/2 peeled lemon rind, no pith
- 90 g raw sugar
- 40 g lemon juice
- 80 g unsalted butter
- 2 eggs

Mill raw sugar 15 sec sp 9
Add plain flour cocoa & butter combine 10 sec sp 10 Add egg yolks & iced water mix 8 sec sp 8 till mix comes together.
Turn out onto floured mat and shape into round disc wrap in glad wrap and rest 20min in fridge
Use either 1 large flan tin or 8 small
Roll pastry out to fit pastry cases using extra flour, making sure sides are not stretched. Trim edges of case. Prick pastry base and rest in fridge for 30 minutes whilst oven is preheating to 160 degrees.
Blind bake using baking paper / rice or pie weights 12 minutes, remove pie weights or paper /rice bake a further 10 minutes. Add filling when cool.
Mill sugar & lemon rind 15 sec sp 10
Scrape down sides of bowl
Insert whipping attachment
Add all remaining ingredients cook 8 minutes 80 degrees sp 3
Is ready when thick & shiny. If too runny cook a further 2-3 minutes.
Pour onto cooled tart case or store in sterilized jars in fridge.

Tip
Lemon butter variation - passionfruit- use only 30g lemon juice add 40 g passionfruit pulp and proceed as per recipe.
Another easy filling Variation: chocolate custard
Chocolate custard as per EDC or cook book 500g milk 60-100g raw sugar 30g cocoa powder 30g corn flour 2 eggs
Add all ingredients to jug in order listed, cook 8 min 90 degrees sp 4
Pour into prepared cases , chill. Serve with cream / fruit
