Ingredients
For the cake:
- 120 grams Butter
- 60 grams brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 220 grams self-raising flour
- 2 tsp ground cinnamon
- 160 grams Milk
For butter drizzle topping:
- 1 tbsp Butter
- 1 tbsp caster sugar
- 1 tsp ground cinnamon

- Preheat oven to 170'C. Grease and line a 20cm springform cake tin.
Place butter and sugar into TM bowl and beat 10 sec/sp 4. Scrape down and repeat.
Add vanilla and eggs and mix 15 sec/sp 4.
Add flour, cinnamon and milk, and mix 3 - 6 sec/sp 4, until just combined. Use your spatula to mix any remaining dry ingredients from around the side of the bowl into the batter.
Scrape batter into prepared cake tin and use your spatula to spread it evenly to the edges.
Bake in preheated oven for 30 - 40 minutes, until a skewer inserted into the centre of the cake comes out clean. - This should be prepared in the last few minutes of baking time.
Combine all ingredients in a small bowl, a small saucepan, or a clean TM bowl. Melt over low heat and stir well.
Brush this mixture over the hot cake as soon as you take it from the oven. Leave the cake to cool in the tin for 5 - 10 minutes before removing it to cool completely.

Tip
This is not a very sweet cake. Sugar can be increased to taste.
I use half white and half wholemeal flours with good results.
Makes a good lunchbox treat.
