Ingredients

Rough Puff Pastry

  • 200 grams plain flour
  • 200 grams Cold Butter, cubed
  • 1/2 teaspoon salt
  • 2 tablespoons cold water

Pastry alternative

  • 1 sheet Puff pastry, thawed

Filling

  • 1 brown onion, quartered
  • 1 clove garlic, peeled
  • 150 grams bacon, finely diced
  • 5 sprigs fresh parsley
  • 40 grams Parmesan cheese, cubed
  • 500 grams ricotta
  • 60 grams Milk
  • 2 eggs
  • ground nutmeg
  • Freshly ground black pepper
  • 1 small red capsicum, cut into strips

Recipe's preparation

    Pastry
  1. Place flour and salt into TM bowl and 'sift' 10 sec, speed 4.


    Add cold butter and cut into pastry, 10-15 sec, speed 6.


    Add just enough cold water to bind dough, 5 sec, speed 6.


    Set dial to closed lid position and knead on interval setting, 1 min.


    If dough is no longer cold, refrigerate for 15 mins before continuing.


    Tip dough onto floured surface and roll out into rough rectangle (about 30cmx15cm), short edge towards you.


    Fold top third down and bottom third up, then rotate 1/4 turn and roll out into rectangle again, sprinkling dough and surface with flour when necessary. Repeat three or four more times.


    Roll dough into baking paper and place in fridge 20 - 30 mins.


    Alternative to all of the above - defrost one sheet of puff pastry! Easy.


    Line round pie dish with pastry and trim edges.
  2. Filling
  3. Preheat oven to 180C.


    Place onion, garlic and parsley into TM bowl and chop 6 sec, speed 6.


    Add bacon and cook 5 mins at Varoma temp, reverse speed soft. (Note: for a crispier finish on the bacon, do this step in a frying pan on the stove.) Spread this mixture onto the pastry shell. No need to wash bowl.


    Add parmesan to TM bowl and grate 10 sec, speed 8.


    Add ricotta, milk, eggs, nutmeg and pepper, and mix 5 sec, speed 4 until combined. The mixture will be quite thick, unlike traditional quiche fillings.


    Spread ricotta mixture onto bacon & onion in pie dish. Arrange capsicum strips on top and spray lightly with oil.


    Bake in preheated oven, about 50 minutes, until golden.

Tip

Vegetarian options:
-Leave out the bacon & stir onion through ricotta mixture.
-Leave bacon & onion out altogether & top with thinly slice tomato, fresh chopped parsley and salt & pepper.
