Classic Apple Pie
- 1 Sweet Shortcrust Pastry
- 7-8 apples, peeled, cored and quartered
- 30 grams water
- 83 grams raw sugar
- 14.4 grams lemon juice
- 4 grams cinnamon powder
- 1 egg, lightly beaten
- 3 tbsp raw sugar, for sprinkling

- Preheat oven to 190 degrees Celsius (170 if using fan forced)
- Grease a 24cm pie dish with butter and set aside.
- Place 7 - 8 apples, peeled, cored and quartered "Blend" 5 sec/speed 3.5.
- Add 30g water 5 min/100°C/speed"Gentle stir setting"
- Add 83g raw sugar, 14.4g lemon juice and 4g cinnamon. 1 min/speed"Gentle stir setting"
- Meanwhile, take pastry out of fridge and divide into 2 unequal portions (approx. 1/3 and 2/3). Lightly flour a bench and roll out the large pastry portion until it is approx. 3mm thick. Place the pastry over the pie dish and press down so that it covers the base and sides.
- Drain any excesss liquid from the apple mixture. Then add to the pie dish and spread out evenly.
- Roll out remaining pastry until it is 3mm thick. Place on top of the pie.
- Trim off any excess. (you can use this rolled out again as a shape on the top if you'd like)
- Brush 1 egg, lightly beaten over the top of the pie and sprinkle 3tbsp raw sugar, for sprinkling over the top.
- Cut a couple of slits into the top of the pastry.
- Bake in the oven for 30-40 minutes or until the pie pastry is lightly golden and crispy.
