Ingredients

Cake

  • 1 zest of one lemon
  • 2 large eggs
  • 150 grams soft butter
  • 175 grams sugar
  • 175 grams Self Raising Flour
  • 125 grams Milk
  • 1 pinch salt

Syrup

  • 150 grams icing sugar
  • 50 grams lemon juice, (Around 1 1/2 large lemons)

Recipe's preparation

    Cake
  1. Pre-heat oven to 180 degrees Line loaf tin with baking paper

  2. peel lemon rind with potato peeler add to  bowl with sugar and grind for 10secs speed 9 scrape down and do again if needed then continue with recipe

  3. Place eggs, butter and sugar in TM bowl. Process for 20 seconds, speed 5. Scrape down sides of bowl with spatula.

  4. Add flour, milk and salt to TM bowl. Process for 30 seconds, speed 6, scraping sides halfway through

  5. Pour batter into loaf tin. Bake for 45 mins, until golden and firm to the touch

  6. Remove cake from oven and stand tin on cooling rack. Rinse TM bowl

  7. Syrup
  8. Place icing sugar and lemon juice in TM bowl (or use granulated sugar and process for 10-15 seconds, speed 9)

    sometines i double this to use for next time it keeps well in fridge and if you do larger cake you need more syrup

  9. Cook for 3 mins at 90 degrees, speed 4.

  10. Prick warm cake all over with fork, and pour over syrup. Leave cake to cool completely before turning out.

Tip

when making a cake in round tin i do one and a half of recipe makes a larger cake

    I made this last Sunday and am making it again this Sunday as it was so delicious. It only lasted 2 days! Much better than a previous recipe I used to use which the cake used to be dry. Not this one. Delicious. Thank you!

    Really easy to make, made it into a slab cake and sliced it into squares. Very good, decreased the cooking time to 30 mins as the cake was not so deep.

    Seriously good cake! Not too sweet. I didn't add all the syrup because I was worried it would be too sweet for me, so I put about half in a little jug for people to add more if they wished. Hardly anyone did, and they raved about it! I also added more lemon zest to start with. This will be my go to recipe when I want a treat/ take a sweet plate! Thanks for sharing.

    I swear I followed the directions to the letter but have ended up with a very dense flat cake! Do you need to wait for the cake to cool before adding the drizzle? Actually now I think about it I poked holes all the way to the bottom with a skewer instead of lightly pricking it with a fork. Maybe this was the problem?

    Made the cake today with the syrup and it was delicious.  My whole family loved it and it's almost finished. It's simple and a great way to use up my lemons.  I'll definitely be making it again soon. Great recipe
