Ingredients

Short Crust Pastry

  • 100 g raw sugar
  • 200 g Butter (cut into cubes)
  • 370 g plain flour
  • 1 egg

Coconut Filling

  • 225 g raw sugar
  • 150 g Desiccated Coconut
  • 125 g Butter (Softened)
  • 3 eggs
  • 1 tsp cinnamon

Recipe's preparation

    Short Crust Pastry
  1. Note: You may follow the Recipe for Sweet Short Crust Pastry from the Basic Cookbook or Recipe Chip; otherwise follow these instructions.

    1. Preheat oven to 180 degrees

    2. Add sugar to mixing bowl and mill for 10 sec/speed 10

    3. Add butter (cut into cubes), plain flour and egg and mix for 20 sec/speed 5. Mix for a further 10 seconds if required.

    4. Empty dough onto your Thermomat or floured bench top and work into a ball, then flatten to a disc and refrigerate for 30 minutes).

    5. Roll the disc out between 2 sheets of cling film then line the tart case. Price with a fork and blind bake for 15 minutes. If the tart base starts to rise gently pat it down with a damp tea towel. 

  2. Coconut Filling
  3. 1. Add all of the filling ingredients to the TM Bowl and mix for 15 sec/speed 5. Scrape sides of bowl and mix for further 10 seconds. 

    2. Transfer mixture to the tart case and bake in the over for 40 minutes on 180 degrees.

    Tart should have a thin crust and golden colour as pictured. Serve warm or chilled by itself or with a scoop of Ice Cream or Custard!

You can use the Sweet Short Crust Pastry from the Basic Cook Book.

Refrigerate Pastry for less time in Winter or cooler climates to speed up prep time, needs to be firm enough to work with.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
