  • 130 grams Raw or Caster sugar
  • 150 grams dessicated coconut
  • 3 --- egg whites

Recipe's preparation

  1. If using raw sugar, weigh into TM bowl and mill for 2-3 secs on speed 9 (otherwise simply weigh in caster sugar).

  2.  

    Add remaining ingredients and combine for 10-15 seconds on speed 5 (use spatula to assist incorporating at end if needed).

  3.  

    Use a tablespoon to shape the mixture into balls and place onto baking trays lined with baking paper and bake at 180 degrees celcius for around 12 mins.

  4.  

    Store in an airtight container for up to 2 days or freeze.

Tip

Great way to quickly use up leftover egg whites!

If you only have shredded coconut, mill for a few secs on sp5-6!

Recipe easy to change depending on how many egg whites you have!

    So easy and delicious!

    Added a tsp of almond essence to mix and half a glacé cherry on top of each one. Yum!

    Really delicious and so quick and easy. Will probably reduce sugar and add raspberry jam or small piece of cherry before baking mext time.

    OMG These are amazing!
    I used sweetener instead of sugar so they'd fit within my diet and they turned out perfect.
    One didn't make it off the tray before I had to taste test 😅

    Wow, these are so good, and SO easy!
    I reduced sugar to 100 g, which tasted great.
    I might have undercooked them a bit? They had an OK colour and were chewy, but they had a bit of a soggy bottom the next day. I was baking anyway, so I bunged them back in (6 minutes @ 170) to be twice baked, and they were AMAZING!

    I made these the other day, and they were gobbled down. Soooo delicious!
