Ingredients

Cumquat and Almond Syrup Cake

  • 650 grams cumquats
  • 250 grams almonds, almond meal
  • 200 grams white sugar
  • 4 eggs
  • 35 grams tapioca flour
  • 1 tsp baking powder
  • 80 grams cumquat marmalade
  • 30 grams white sugar
  • 60 grams water

Recipe's preparation

    Cake
  1. Add 700g water to TM bowl. Place cumquats in simmering basket. Steam /30mins/ 100°C/speed 1 or until very soft. Drain and cool cumquats.

    2. Line base and grease a 24cm spring form pan. Dust with flour or a gluten free flour for a GF cake. Preheat oven to 170°C fan forced.

    3. If making almond meal process to fine meal 10sec/sp 9. (I used commercial almond meal.)

    4. Remove seeds from cumquats and process 5 sec/sp 5. Reserve cumquat pulp. Clean bowl if you like (but I didn’t bother).

    5. Add butterfly whisk. Add eggs and sugar to bowl and whisk 3 mins/ sp 4 until foamy.

    6. Remove butterfly whisk.

    7. Add the almond meal, tapioca flour, baking powder and reserved cumquat pure. Mix 8 secs/ sp 4. Scrape sides and mix again 8 secs/ sp 4 or until combined.

    8. Pour batter into tin and bake 40 minutes or until set when skewer is inserted.

  3. 1. Clean bowl. While cake is cooking place all syrup ingredients in TM bowl and cook 6 mins/98°C/sp 2.

    2. Prick hot cake all over with a skewer and pour hot syrup onto cake. Sit for 5 minutes in tin and then remove to cool.

    Serves 16 (moderate serves)

Tip

Serve as is or as a desert cake with cream. This is a dense, moist cake that holds together well when cut. Toasted flaked almonds or candied cumquats would be good as decoration.

If you have a cumquat tree this is a great way to use extra cumquats after making marmalade jam, cumquats in brandy etc.

    This has become one of my favourite cakes. I've made it with 650g or 500g of kumquats, with 4, 5, or 6 eggs, and with 100-110g of coconut sugar (that's enough sweetness for me, with or without syrup).
    My added touch: drizzling dark chocolate on top or adding dark chocolate chips. Try it!
    For the syrup you could also do the juice of an orange or lemon with 30g (50-60g for lemon) of sugar, 2 minutes, 100 degrees, speed 2.
