Ingredients

Cookie Dough

  • 200 grams Butter, cubed
  • 350 grams plain flour
  • 1.5 teaspoons baking powder
  • 70 grams cornflour
  • 150 grams caster sugar
  • 1 egg
  • 2 teaspoons vanilla extract

Butter Icing

  • 200 grams icing sugar
  • 40 grams Butter, cubed
  • 40 grams sweetened condensed milk
  • 1/2 teaspoon Vanilla extract/essence

Recipe's preparation

    Cookie method
  1. Pre-heat oven to 180c.

    Add all ingredients to the bowl except egg and vanilla, and mix 15 seconds on speed 6.

  2. Add egg and vanilla and then, knead for 50 seconds.

  3. Using a tablespoon measure, scoop out level spoonfuls and hand shape into balls, placing them on a baking tray covered with baking paper or silicone mat and then use a fork to press down the cookie discs.

  4. Bake cookies for 15 minutes until slightly golden.

  5. Butter Icing (to pair cookies together once they have cooled)
  6. Add to the TM bowl all ingredients and beat for 10 seconds speed 5 or until mixed through (you may need to scrape down and continue until smooth).

  7. Use heaped teaspoon amounts to the centre of half of the cookies and use a non-iced cookie to press together. Enjoy!

Tip

If using 25g balls you should end up with around 36 cookies, making 18 custard creams once they are sandwiched together with the yummy icing!
