Ingredients

  • 2 eggs
  • 220 grams caster sugar
  • 125 grams Butter, melted
  • 1 teaspoon vanilla extract
  • 75 grams Self Raising Flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 125 grams Milk
  • 4 Apples (Pink Lady or Granny Smith), Cored & Thinly Sliced

Recipe's preparation

  1. 1. Prehea oven to 180. Grease a 22cm round cake tin and line the base with baking paper.

    2. Beat eggs for 30 senconds on speed 7.

    3. Add Caster Sugar and continue on speed 7 for 2 minutes or until the batter becomes thick.

    4. Stir through the melted butter & vanilla for 20 seconds speed 2.

    5. Add the flour, cinnamon, salt and milk. Stir through for 30 seconds speed 2.

    6. Add the apples to the batter and stir through Counter-clockwise operation"Counter-clockwise operation" speed 1 making sure all the apples have been coated in the batter.

    The batter will be quite runny.

    7. Pour into the cake tin and bake for 1 hour or until golden brown and coming slightly away from the sides of the pan. The cake is cooked when a skewer insterted into the centre comes out clean. Cool in the tin for 10 minutes before carefully turning out onto a wire rack, Dust with icing sugar and serve with thick cream or however you like.

    This is one of my favourite dessert/cakes. The same recipe is in Julie Goodwin's Heart of Home cookbook. Great to see it written for thermomix.I use the butterfly when beating eggs and adding butter - so I reduce the speed to just below 4, and do it for a little longer. The thermomix also makes mixing the apple through the batter easier (and less washing up 😊) - I do ensure that it is on reverse when doing this so that the apple isn't cut further.I keep the apple in chunky dice (potato salad sized cubes), and my family prefer it this way rather than finely sliced.Brilliant recipe that is sure to impress!

    Further to my last comment, Gluten free self raising flour works well so it is also suitable for celiacs. I also had issues with springform pan leaking the first time I made this, and now always cook in a standard cake tin.

    I have this cake baking now, but next time will definitely try Natvia or similar sweetener as posted in earlier comments.

    This is so delicious! have made this many times. And looks impressive too. I prefer to use Granny Smith apples and I slice them THICKLY. I like how they still have a slight fresh taste to them (not overcooked).
    I always line my springform tin with baking paper so that it doesn't leak.
    I cook it low in the oven, on 160C FANBAKE, and it forms a bit of a crust on the bottom, which is extra nice!
    It works fine too, when I replace the sugar with 180g Natvia (or Erythritol and Stevia), for a low sugar alternative.

    This cake is the bomb!
    Absolutely loved it. I halved the sugar and it was perfect.
    Next time I will sit my springform tin on a tray as some of the mixture dripped onto the bottom of my oven.

    Delicious. Let the melted butter cool and added 3 apples and 2 pears was the right amount of fruit.

    Absolutely delicious but not a cake! I used 4 large golden delicious apples and barely fitted the mix in the tin. Substituted half brown sugar and cut it down to 200g. Served hot with cream. Will try again with less butter!

    Amazing! I reduced the sugar & butter to 200g & 100g like suggested & it was perfect. I diced my apples also. Very impressed but I admit I didn't think it would work when I saw how runny it was. Wouldn't work in my springform tin. Can't wait to make it again

    Should also be called an apple pie cake. Absolutely delicious! I heated the eggs and sugar to 37°C before adding the melted butter and had no issue with a spliting mixture. I didn't feel guilty eating this with all the apple 🤣so it's definitely a keeper, thank you.
