Ingredients

Base

  • 250 grams raw pecans or cashews
  • 1 cup Shredded Coconut
  • 8 dates pitted & roughly chopped
  • 1/2 teaspoon Vanilla Paste
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon Maple syrup
  • 2 tablespoons Psyllium husk
  • 2 tablespoons filtered water
  • pinch of sea salt

Caramel Filling

  • 1 Cup Coconut oil
  • 1/2 cup almond butter
  • 1/2 teaspoon Vanilla Paste
  • 1/4 Cup Maple Syrup
  • pinch of sea salt

Chocolate Icing

  • 130 grams cacao butter
  • 1/3 cup cacao powder + 2 tablespoons extra
  • 1/4 Cup Maple Syrup
  • 1 tablespoon honey

Recipe's preparation

    Base
  1. Place all base ingredients into the mixing bowl for 20 seconds speed 6 until well combined.

    Line a standard slice tin with greaseproof paper.  Using your hands, firmly press the mixture into the prepared tin.  Place into the freezer while you make the caramel.

  2. Caramel Filling
  3. Place all the ingredients into the mixing bowl for 10 seconds speed 6.  Scrape down sides & repeat 10 seconds speed 6 until well combined.

    Pour over the base & return to the freezer.

     

  4. Chocolate Icing
  5. Place cacao butter into mixing bowl for 5 minutes 55C speed 2 to melt.

    Once melted completely add remaining ingredients for 2 minutes speed 3.

    When completely combined pour over caramel & return to the freezer for a few minutes to set.

Tip

Dr Libby's recipe uses melted coconut oil in the caramel, however I find using the solidified form whips up well & I prefer the texture.  Give both versions a go & see which you prefer.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Thanks kj1070, my friend makes this conventionally, and now i can whip it up in the Thermo for her, can’t wait to make this. If an allergy to almonds - will cashews do instead for the base?
