  • 200 grams caster sugar
  • 80 grams Shredded coconut

  • 1/2 teaspoon vanilla essence

Recipe's preparation

    Making the Shells
  1. 1. Clean and Dry the TM bowl thoroughly. Preheat the oven to 120 degrees celcius and line two baking trays with baking paper.

    2. Mill the sugar for 5 seconds Speed 8 reserve sugar in a side bowl.

    3. Fit Butterfly and add egg whites, cream of tartar and salt. Whip at speed 3.5 for approx 1 minute until soft peaks form.

    4. Leaving the butterfly turning at speed 3.5, slowly add the reserved sugar through the lid over 1.5 minutes.

    5.Continue whipping for 1 minute after adding all the sugar. During this period add the vanilla. 

    6. Slow the TM to speed 1.5 and add 40 grams of shredded coconut through the lid. Stop the TM once all added. Gently fold in the almond meal using the spatula.

    7. Scoop the mix out making nests of 2 heaped teaspoons each on the baking tray. Sprinkle each nest liberally with shedded coconut and then nestle 3 mini eggs into the centre of each nest.

    8.Bake for 1 hour until nests are slightly browned and crispy.

     

Tip

You can add a few drops of food colouring to make gorgeous pastel coloured nests to fit colour themes.

Adding the mini eggs before baking causes little cracks to appear in the eggs, it looks like they are hatching.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
