Ingredients
Base
- 120 g Butter, cubed
- 60 g raw sugar
- 1/2 tsp vanilla extract
- 150 g plain flour
Filling
- 500 g cream cheese, softened and cubed
- 80 g raw sugar
- 2 eggs
- 1 tsp vanilla extract
Topping
- 2-3 apples, peeled and sliced
- 2 tbsp raw sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon

Add all base ingredients to bowl and mix, speed 6 for 30 secs
Press the mixture into lined, prepared springform baking tin. Set aside.
Mill raw sugar 10 secs, speed 9
Add remainging filling ingredients to bowl and process speed 6, 15 secs.
Scrape down bowl with spatula
Mix again, speed 6 for 20 secs
Pour mixture over base in tin.
Toss sliced apples in a separate bowl with sugar, lemon juice and cinnamon
Arrange apple slices on top of filling/base
Place in preheated oven at 180 degrees and bake for approximately 1 hour, or until mostly set, with slight wobble

Tip
Any apples would work well with this, although for less sweet varieties (granny smiths etc) you may wish to add a little more sugar to the topping.
I serve this cold, but I'm told it's also good warm

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Delicious! Only had 250g block of cream cheese, so halved everything and made individual cheesecakes in muffin tin. A winner!
