I'm cooking this today

Recipe's preparation

    To make the base:
  1. Add all base ingredients to bowl and mix, speed 6 for 30 secs

  2. Press the mixture into lined, prepared springform baking tin. Set aside.

  3. To make the filling;
  4. Mill raw sugar 10 secs, speed 9

  5. Add remainging filling ingredients to bowl and process speed 6, 15 secs.

  6. Scrape down bowl with spatula

  7. Mix again, speed 6 for 20 secs

  8. Pour mixture over base in tin.

  9. To assemble;
  10. Toss sliced apples in a separate bowl with sugar, lemon juice and cinnamon

  11. Arrange apple slices on top of filling/base

  12. Place in preheated oven at 180 degrees and bake for approximately 1 hour, or until mostly set, with slight wobble

Tip

Any apples would work well with this, although for less sweet varieties (granny smiths etc) you may wish to add a little more sugar to the topping.

I serve this cold, but I'm told it's also good warm

    TM 5
    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Delicious! Only had 250g block of cream cheese, so halved everything and made individual cheesecakes in muffin tin. A winner!

    This cheesecake is fantastic. I made it to take to work and my work colleagues loved it. I love how the base isn't the usual biscuit base too. A+ Thanks Tracey1602
