Ingredients
Red Velvet
- 115g unsalted butter, cubed
- 215g raw sugar
- 35g cocoa powder
- 1 tsp vanilla extract
- Pinch salt
- 1-2 tbsp liquid red food colouring
- 1 tsp apple cider vinegar
- 2 eggs
- 115g plain flour
Cream cheese
- 250g cream cheese, softened
- 50g raw sugar
- 1 egg
- 1/2 tsp vanilla extract

Preheat oven to 180 degrees.
Grease and prepare 20cm x 20cm square pan (I use a silicone pan, which doesn't require any preparation).
Melt butter, 3 mins, 80 degrees, speed soft.
Add remaining ingredients and mix , 10 secs, speed 5.
Reserve 1/3 cup (approx) batter for topping.
Pour remaining batter into prepared cake tin.
Place all ingredients into bowl and mix, 10 secs, speed 5.
Spoon cream cheese layer on top of red velvet brownie batter in pan.
Add reserved red velvet batter.
Using a knife or skewer, gently swirl to marble the 2 colours (do not do this too much, to ensure a good pattern after baking).
Bake for 30 mins at 180 degrees.
Allow to cool slightly, then transfer to cooling rack.
Allow to cool completely, before cutting into squares.

These are an unusual twist on the normal brownie. Great festive treats for Christmas or Valentine's day!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
