Ingredients
Easy Lime Pie
- 180 g Marie biscuits or sweet plain biscuits
- 85 g unsalted butter
- 50 g caster sugar
- 3 egg yolks
- 395 g sweetened condensed milk, canned or Thermomix made
- 3 limes - juice and zest
- 3 Egg Whites at room temp
- 100 g icing sugar
- 1/2 teaspoon Cream of Tartar.
- 1 pinch salt

Preheat oven to 190 degrees or 180 degrees fan-forced.
Line a 23cm pie tin with baking paper or grease a non-stick 23cm pie tin.
To make the pie base:
Melt butter 3 mins 10 sec 50 degrees Speed 2.
Pop in Marie biscuits and caster sugar, MC on, and blitz for 5 sec Speed 10.
Scrape down with your spatula and blitz for another 5 sec Speed 10 MC on.
Press this pie base mixture firmly into the base and sides of the pie tin, and bake for 8 minutes.
Wash and dry your Thermomix bowl, then insert butterfly whisk.
For the pie filling:
Whisk the egg yolks for 1 min Speed 4 MC on. Pour this mixture into a separate bowl.
Pop the lime zest (I use a potato peeler to peel the limes, then blitz the zest for 3 sec Speed , lime juice and condensed milk into your Thermomix bowl and mix 30 sec Speed 3.5 MC on.
Pour in the egg yolks and mix 15 sec Speed 3.5.
Now pour your filling mixture into the pie base and bake for a further 15 minutes.
For the meringue topping:
Very carefully clean and dry your Thermomix bowl and butterfly whisk, then pop in the egg whites. Beat 2 mins Speed 3.5 MC on.
Scrape down with your spatula, then add salt and Cream of Tartar. Mix 2 mins Speed 3.5, and slowly add the icing sugar through the hole in the lid.
Spoon the meringue mixture over the top of your pie, and pop it back in the oven for another 8 minutes to bake until the meringue is lightly golden.
Cool in the fridge for at least 1 hour before cutting. Enjoy!

Substitute lemon zest and juice for limes <3

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
