- 300 grams plain flour
- 150 grams raw sugar
- 120 grams Butter, chopped
- 1 egg
- 2 teaspoons vanilla, Essence or paste
- 1 tablespoons water, chilled

- Preheat oven to 190C (fan forced oven)
- Place flour, sugar, chopped butter, egg, water and vanilla in TM jug - mix 30 seconds on speed 5.
- Turn out pastry onto a silicone mat or baking paper and press together to combine and shape into a smooth shape.
- Wrap in silicone mat or cling film and refrigerate for at least 15 minutes
- When chilled, remove from fridge and place on floured bench or silicone mat. Cover with a second mat or a piece of baking paper.
- Roll out until 3-4 mm thick
- Using a cutter, cut out shapes and place on baking paper lined oven tray.
- Bake until golden brown (which will depend on thickness of cookies, but generally between 8-12 minutes
Tip
These cookies were developed to have granules of sugar visible which add a nice texture and crunch. If you prefer, you can mill the sugar first on speed 10 for 5-10 seconds, and then proceed with step 1.
Once mixed, pastry should combine and hold together when pressed between fingers. It it doesn't, add a little more water and knead for a few more seconds.
If, after chilling in refrigerator, the pastry is too sticky to easily roll, sprinkle with a little flour (both sides) until it is easy to work with.
The thinner the cookies, the quicker they will cook, and the crisper they will be after baking.
Additional flavourings such as cinnamon, ground ginger, orange or lemon zest, etc, could be added to the mix to created different variations.
The number of cookies made will depend on the size of the cutters used! If using a little teddy cutter, you will make many more than the suggested 40!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Easy to make.
I made this with my 7 year old. Dough was easy to make.
I needed to chill it a bit longer but it was easy enough to figure out what worked best for us (a little flour and rolling the dough between two baking paper sheets, then sliding the bottom sheet onto the tray after removing excess dough from the cut pieces).
These are delicious, and we haven't even iced them yet. Will be making them again. Thank you for the recipe!
DELICIOUS ! Been looking for so long for a cookie reicipe that is yummy - all others i found to be really bland, but loved this one. I had to add quite a bit of flour to make it workable - but once i overcame that issue, it was so easy.

Nice simple cookie recipe...I milled the raw sugar first and my 3.5yo twins enjoyed using cookie cutters to cut out different shapes. Thanks for sharing.
You can totally mill your sugar to caster sugar. I deliberately left it grainy because I love the effect of the sugar granules in it!
