Recipe's preparation

  1. If you need to grind whole almonds into meal, do this now. 10 sec / sp 8.
    Wash and dry mixing bowl.
  2. Whisk eggwhites stiff: insert butterfly, and beat about 2 min / sp 3.5 or until soft peaks form. Transfer into a medium-large bowl and set aside. (No need to wash bowl, but do take out the butterfly!)
  3. Melt butter and sugar, about 4 min / sp 1. Keep going in 30 sec increments if that was not long enough.
  4. Add almond meal, sugar and egg yolks. Mix 10 sec / sp 4 to combine. Add to the bowl with the egg whites and gently fold it into each other.
  5. Cook in a springform pan in preheated oven (180°C) for 30 min. Cool in tin. Serve with berries / cream / ice cream.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
