Ingredients

Orange cake

  • 200g raw sugar
  • 300g almonds
  • 2 oranges, washed / unpeeled / quartered
  • 3 eggs
  • 1 tsp gluten-free baking powder

Orange syrup (optional)

  • 30g raw sugar
  • 1 orange - juice only

Recipe's preparation

    Orange Cake
  1.  

    1. Preheat oven to 170°C. Grease and line a round cake tin.
    2. Place sugar in TM bowl and mill 3 sec / speed 9. Set aside.
    3. Place almonds in TM bowl and mill 15 sec / speed 9. Set aside.
    4. Place oranges (leaving skin ON) in TM bowl and chop 10 sec / speed 8.
    5. Add eggs, sugar, almond meal and baking powder and mix 20 sec / speed 4.
    6. Pour into cake tin and bake 60 mins or until a skewer inserted into the centre comes out clean. 
    7. NB: cover with Alfoil after 40 minutes to prevent it browning too much on top.
  2. Orange Syrup
    1. Place sugar and juice in TM bowl and cook 2 mins / 100°C / speed 2.
    2. Use a skewer to gently poke small holes in top of cake. Pour syrup over cake and allow syrup to soak a few minutes before serving.

     

    The cake is lovely and moist without the syrup too.  tmrc_emoticons.)

    My son said this was the best cake EVER!  Very simple and easy. Didn't put syrup on and it was still beautiful and moist.

    So quick to prepare, cake is moist, no need for sugar syrup.  Only modification, I reduced the sugar to 125g (and still hubby complained was a bit sweet - it probably depends on your oranges!).

    Really fantastic cake. I made a few modifications.

    - I used xylitol instead of sugar

    - I milled my own almond meal

    - I used 2 oranges that had been cooked in my mulled wine and puréed them with a grapefruit without the skin 

    served with EDC vanilla bean custard and caramel sauce!

    I used 300g mandarins instead of the 2 oranges and a teaspoon vanilla bean paste. I then frosted with a dairy free icing of coconut cream/maple syrup/vanilla bean whipped
