- 280 grams Gluten free self raising flour
- 250 grams Almond milk
- 2 eggs
- 1.5 heaped teaspoons Gluten free baking flour
- 1 pinch salt
- 1.5 heaped tablespoon vanilla essence
- 1.5 heaped tablespoons Rice malt syrup or maple syrup

Mix all ingredients into the TM bowl.
insert MC and mix 10 sec/ speed 4
scrape down sides and mix again for 5sec speed 4
Leave to rest for at least 20 plus minutes to settle as this is what makes the fluffiest picklets.
Mixture will be quite thick. Spray or butter pan and put heat on low. Will take longer but need to cook through. When turned I usually butter the cooked side as this softens it while the other side is cooking.
Yummy just lashed with butter or strawberry chia jam and dollop of cream. Great for lunch boxes too.
Tip
If you choose the rice malt syrup or maple syrup can be replaced with 50 gms caster sugar.

What a great FODMAP pikelets. I only wish they were a bit sweeter.
I wanted to use use up some unsweetened vanilla milk so found this recipe and rused that in place of the regular almond milk and vanilla essence and they turned out well! Thanks so much!
