  • 150 g Rapadura suagr
  • 1 egg
  • 250 g flour
  • 1 heaped teaspoon baking powder
  • 1 jar Fruity Pear Mince, P27 Festive Flavour

Recipe's preparation

  1. Beat butter and sugar together for 30 seconds on speed 4. Scrape down the sides of the bowl and beat for a further 30 seconds on speed 4. Add the egg and beat for 30 seconds on speed 4. Add dry ingredients and mix for 30 seconds on speed 4 or until fully combined.

    Flatten half the mixture into a lined biscuit tray then spread the fruity mince over the top . Roll the remaining dough between sheets of silicon paper into the same shape as the biscuit tray and then place on top of the fruity mince slice and press down firmly. Prick all over with a fork then bake in a moderate oven until golden. If you like the biscuits to be crisper turn the slab over, peel off the paper and cook for a further 10 minutes so the bottom can dry out. Cut into finger shapes and cool on a wire rack.

    Yum, yum! I used wholemeal flour and rapadura. I made the Fruity Pear Mince with Rapadura, Maple Syrup and Honey, less sugar in total.

    Hi staggy,

    The fruity pear mince comes from a festive flavor cookbook that does seem to out of print now. Sorry about that. Use any kind of fruit mince if you can't find the recipe online anywhere. The fruity pear mince is around a kg of pears cooked with spices, brandy and lots of dried fruit like sultanas etc and it is divine. I'm not usually a fan of fruit mince but that one is addictive and you can happily eat it by the spoonful!

    I take these biscuits bushwalking as they keep well. I make sure they're really crisp when I bake them so they last longer. I used to buy the commercial version but worried about what was in them and how they made me feel after I'd eaten too many of them so love that I can make my own!
