Ingredients
The Streusal:-
- 180 g Butter, cubed
- 150 g sugar
- 250 g plain flour
- 1 tsp cinnamon
- 1/2 tsp Nutmeg
- 1 tsp vanilla
- 1 tablespoon cream, (optional) see tips
The Cake:-
- 50 g Butter, cubed
- 125 g cold Mashed Potatoes, see tip
- 190 g sugar
- 340 g SR flour
- 110 g sultanas
- 225 g Milk

Put all Streusal ingredients into the TM bowl, in the order they appear on the ingredients list. 20-25 sec/speed 5 until it is a crumbly consistency

Repeat if necessary. (You are wanting a nice crumbly topping - if you need to, add a little more flour, or, a little cream, depending on its consistency)

Transfer to another bowl, and set aside. - 1.
Preheat oven to 180°C. Line a sponge-roll tin with baking paper.

Melt the butter in the TM bowl. 2 min/80°C/"Gentle stir setting"
Repeat if needed

Add mashed potatoes, & sugar. 10 sec/speed 4
Scrape down sides

Add the flour, sultanas, and milk. 20 sec/speed 4

Put mixture into the prepared sponge-roll tin.
6.
Evenly spread the reserved Streusal over the top of the cake mixture.
7.
Bake for approximately 40-50 minutes or until top is golden and a skewer comes out clean.
8.
Cool in the cake tin.
Optional:-
Before serving, you may wish to dust the cake with a little icing sugar.

Tip
Cream in Streusal:-
The cream helps to hold the streusal together a little more. But it is your choice!
Mashed Potatoes:-
1. When having a meal with mashed potatoes, save 125 g of the mash (BEFORE putting pepper in it!!). I save it before I've put milk or butter or anything into it, but that is up to you. The recipe will still work out well!
2, This mashed potato will store in an airtight container in the fridge for 4-5 days, so no immediate rush to make this cake!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Great that it stirred the memories. I will try it with the salt. This was my mums recipe, but she just added a bit of this and a bit of that!! I tried to duplicate it as best I could. So glad it is close.
I have made this recipe twice now and it turned out perfectly both times.
The only change I made was a large pinch of salt in the streusal.
It tastes just like I remember from living in a German community in my childhood!
