- 300 g Gluten-Free SR Flour
- 120 g Butter
- 150 g sugar
- 3 eggs
The Lemon Curd:-
- 120 g lemon juice
- 120 g Butter
- 150 g sugar
- 2 eggs

- 1.
Preheat oven at 180°C. Grease and line a swiss roll tin.

The Dough:-
Place all dough ingredients into TM bowl. Mix 30 sec/speed 5
Remove dough from the TM bowl and divide in half

Place one half in cling wrap and press down flat
Place it in the freezer for later

Place 2nd half of the dough into the prepared swiss roll tin. flatten a littlle. Then spray a piece of cling wrap with spray oil, and place this on top of the dough. You can now flatten evenly the dough to reach the edges of the tin. Peel off the cling wrap.
(This may look like a very thin base, but that's how it's meant to be)
Bake 10 minutes in the preheated oven.
While this is baking, you can now work on the curd.

Now the Lemon Curd:-
Into a clean TM bowl, place all the Curd ingredients
Cook 5 min/100°C/speed 4

Pour the Curd over the base in the prepared tin

Now take the 2nd half of dough out of the freezer, and quickly cut the dough into small 1-2cm cubes (this may still be a bit gooey, but the cubes don't have to be too great!)

Place these cubes evenly on top of the curd

Bake in oven for a further 25 minutes
10.
Cool completely, then cut and enjoy!!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Love this recipe. Enjoy it so much and planning to make this for weekend visitors.
eggplant:The curd can be either hot or cold, but I find that is isn't hard to make it quickly in the Thermomix, and so opt for this. (The way it is in the recipe above, is to use it hot) Baking may be slightly longer if its cold, so just give it a few more minutes if it needs it. I know you will love this recipe, and enjoy making this in your Thermomix!
I'm still learning Thermomix techniques. This sounds delicious. Does the lemon curd need to be hot/warm when making this? I have curd I made previously, so it will be cold. Thanks.
jennybart: I made this recipe again to take to work to share with my colleagues and received lots of comment about how lovely it was. My son who said he does really like sweet things asked for another slice and another. I believe it's a winner in my home too.
