Ingredients

The Stuffing

  • 90 grams brown sugar
  • 100 grams walnuts
  • 1/2 teaspoon cinnamon

The Dough

  • 180 grams water
  • 1 teaspoon sugar
  • 1 teaspoon dried yeast
  • 260 grams Baker's Flour
  • 3/4 teaspoon salt
  • 8-9 tablespoons oil, for frying

Recipe's preparation

    Put brown sugar, walnuts and cinnamon into TM bowl.
    5 sec/sp 7.
    Transfer to another bowl and set aside for later.

    Now for the dough...
    Into a clean TM bowl, add water, sugar and yeast.
    Warm for 2 minutes/37°C/sp 3.
    3.
    Add to the yeast mix, the flour and salt.
    Mix for 3 sec/sp3.
    Then 30 sec/Dough mode"Dough mode"

    Transfer to a glass, oiled, bowl and cover lightly with oiled cling wrap.
    Leave to rise in a warm spot for 3 hours, or until doubled in size.

    When dough is ready, heat about 3 tablespoons of the oil in a pan over a medium heat.
    Cut dough into 10 equal portions.
    Rub a little oil onto your hands so they become slippery.
    6.
    Take one portion of dough in your hand and spread by sandwiching it between both hands. Spread it until it's a little bigger than your palm.
    Add 1-2 teaspoons of the sugar mix into the centre of the dough and close up the Hotteok - making it into a little parcel. 7.
    Add Hotteok parcel into the pan by flipping the hand to drop the pancake into the pan, with the smooth side (that was stuck to your palm) facing upwards.

    Oil a wide spatula and press Hotteok and slowly flatten it until the diametre becomes about 10cm wide. If you press too much, you will end up with a hole and the sugar content will leak and get messy.

    Fry pancake in oil med heat for 3-4 min until edges start to brown. Lower heat if browning too quickly. 10.

    Repeat process with all the Hotteok. Enjoy! (But be careful, the centre may be very hot!!)

Tip

Try a savoury one. With grated cheese and chives.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
