Ingredients
- 90 gram raw sugar
- 3 eggs, Room temperature
- 1 tbsp golden syrup
- 125 gram Corn Flour (Gluten free)
- 1/3 tsp Bi Carb Soda
- 3/4 tsp cream of tartar
- 1 tsp ground ginger
- 1 tsp cocoa
- 1 tsp ground cinnamon

Describe the preparation steps of your recipe
1. Preheat oven to 170 degrees, and line and crease a 20com springform tin
2. Add raw sugar to clean mixing bowl. Mill 8 seconds/speed 9
3. Transfer to small bowl and set aside
4. Insert butterfly
5. Add 3 eggs to bowl and beat for 15 minutes/speed 3.5 until thick.
6. While blades are still turning speed 3.5 add golden syrup and reserved sugar 1 tsp at a time until all combined and thick and creamy.
7. In a seperate bowl combine corn flour, bicarb soda, cream of tartar, cocoa, cinnamon and ginger.
8. Add combined flours to the TM bowl and combine 30 seconds "Gentle stir setting"
9. Once combined pour into prepared tin
10. Give the tin a little tap on the bench to let some of the air bubbles out and cook 20-25 minutes.
11. Cake is cooked when it springs back in the centre and begins to leave the sides of the tin. Remove from tin and cool on rack.
12. Fill with fresh whipped cream and dust with sifted icing sugar

the reason it seems so flat, you need to separate the eggs from whites. beat the whites first, then gradually add the sugar. When dissolved, add egg yolk one by one. it should be lighter.
