Ingredients

Sponge mix

  • 25 g Butter
  • 50 g golden syrup
  • 160 g raw sugar
  • 4 eggs
  • 100 g SR flour
  • 50 g cornflour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon ginger powder
  • 1/2 teaspoon cinnamon

Cream Filling

  • 300 g whipping cream

Icing

  • 300 g icing sugar
  • 50 g Butter
  • 3 tablespoon hot water
  • 1 teaspoon vanilla extract

Recipe's preparation

    Method
  1. 1. Set oven to 150 degrees.

    2. Grease and line two sponge cake tins.

    3. Melt butter and golden syrup for 3mins/80 degrees/Spead 2. Set aside. Clean and wash bowl.

    4. Add sugar and mill 3sec/speed 9.

    5. Add eggs and combine for 2mins/50 degrees/Speed 4. Remove MC and mix 10sec/Speed 4.

    6. Add remaining ingredients and combine 4 sec/Speed 4. 

    7. Scrape into sponge tins but do not clean bowl. Place into heated oven for 35-40mins or until skewer comes out clean.

    8. Place cream into bowl. Add butterfly and beat 30-40sec/ Speed 4 until stiff. Place in fridge until cake is cooled and ready to assemble. Wash bowl.

    9. Add all icing ingredients and mix 10sec/Speed 4 or until all butter is incorporated. More or less water may be required depending on the stiffness of your icing. Top with sprinkles if preferred.

     

Tip

Not washing the bowl at Step 7 incorporates a slight hint of flavour for the cream. Add extra cream for whipping if preferred and serve alongside sponge cake with strawberries.

    Lovely Light Sponge

    The first time I made this, I accidentally left out the Golden Syrup/butter mixture, so make sure you add this back into the bowl in Step 6! 😅 I also used the butterfly in Step 5.
    I filled the cake with whipped cream and just dusted it with icing sugar.

    My family enjoyed it as much as I did.

    It mentions the butterfly in Step 8, when you beat the cream but I also used it in Step 5.

    Re the golden syrup mixture, I would suggest you add it in Step 6..."Add remaining ingredients...."

    Wanting to try this but have a few questions. It says the butterfly is needed in the list of equipment but it doesn't mention it in the method.


    Also, when does the butter and golden syrup need to be added back in?

    Very nice. My nana used to make the best ginger fluff sponges for birthdays and family get togethers. Her chocolate sponges with choc cream were to die for too ... Sorry I'm rambling now lol back to topic. This sponge was lovely and light though I dusted it with icing sugar instead of a heavy icing (loved that when I was a kid but find I don't like that much sugar now I'm all grown up). I did add about 1/2 tsp of extra ground ginger to the sponge as personal preference - I highly recommend this recipe. X

    Lovely simple cake tasted amazing! I did however use a clean TM bowl to whip the cream and added some extra cinnamon too it. Next time I may add a honey cream frosting instead as the icing but that's just personal choice! Overall a yummy cake!
