Tip
I have made cake using blanched and raw almonds. Smoother texture with blanched almonds and less almondy taste. The lemon frosting does make a big batch of frosting so you may want to half the mixture. You could slice cake in half and ice with lemon frosting in middle as well if you like. One of the nicest gluten free cakes I have tried. Found recipe in a magazine at the doctors and quickly wrote down ingredients before appointment - so not sure who takes credit for recipe!

This recipe is also delicious when you use orange instead of lemon. I think I actually prefer it.

Made this recipe today as cupcakes, for afternoon tea with my sister and nieces. Everyone agreed that they were awesome!

So glad you liked the recipe Caddie. And great to put your own tweaks to it. Must give that syrup a try.
Happy thermomixing!
Great flavour and very tasty. I had no ricotta cheese and used Greek yogurt. Instead of icing I made a syrup out of a lemon and icing sugar and poured it over the cake whilst hot.
this taste great
