Ingredients

Base

  • 125 grams Butter
  • 40 grams Coconut
  • 115 grams brown sugar
  • 150 grams gluten free flour

Filling

  • 2 cans condensed milk
  • 120 grams Butter
  • 160 grams golden syrup

Chocolate Ganache

  • 80 grams cream
  • 100 grams chocolate bits

Recipe's preparation

    Base
  1. Preheat oven 160 degrees (fan forced oven) or 180 degrees (normal oven)
  2. Melt butter and sugar for 3 minutes, 60 degrees, speed 1
  3. Add other ingredients of the base and mix 5 seconds, speed 5. Scrape sides and mix for another 5 seconds speed 5.
  4. Press base into the tray and bake for 15 minutes or until golden brown. Add filling immediately when done.
  5. Filling
  6. Put all filling ingredients in TM bowl and cook for 4 minutes, 60 degrees, speed 2
  7. Put on top of base and cook for a further 12 minutes or until it is golden brown on top
  8. Cool before adding ganache
  9. Ganache
  10. Grate chocolate 10 seconds, speed 8
  11. Add cream, melt 2 minutes, 50 degrees, speed 3
  12. Spread onto slice and cool in refrigerator

Tip

Make sure the caramel filling is a little bit brown when you are baking it this gives a really nice flavour to the slice and a good contrast to the crunchy base.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
