Ingredients

Cookie dough

  • 115 grams white sugar
  • 165 grams dark chocolate
  • 100 grams milk chocolate
  • 225 grams white sugar
  • 115 grams Butter, cubed
  • 100 grams cream cheese
  • 2 eggs
  • 1/4 teaspoon salt
  • 75 grams cocoa
  • 150 grams GF plain flour
  • 1/2 teaspoon baking powder

Recipe's preparation

    Icing sugar for dusting
  1. Mill 115 grams of sugar speed 9 for 20 seconds and set aside for dusting

  2. Cookie dough
  3. Add chocolate to TM bowl, grate speed 9 for 10 seconds, set aside.

  4. Mill second amount of suger (225 grams) speed 9 for 10 seconds

  5. Add butter to sugar and melt, 1 minute, speed 1 at 60 degrees

  6. Add cream cheese and mix, 30 seconds, speed 4.

  7. Add eggs, salt, cocoa, GF flour and baking powder. Mix 15 seconds 

  8. Refridgerate for at least 1 hour

  9. Roll into balls and then roll in the reserved icing sugar. Lay out on baking paper/sheet and squash with fork. Bake for 12 or 15 minutes depending on your preferred texture.

Tip

I usually roll the cookie dough into a log shape using 'go between plastic' and freeze to have on hand. Just defrost a little bit, cut into portions and roll in icing sugar, then bake.
