- 120 g Butter, soften in ™ 40sec 50 sp 4
- 120 g ground almonds
- 60 g Coconut
- 2 tsp baking powder
- 130 g Coconut sugar
- 2 eggs
- 60 g Milk
- rind of 1 large lemon
- 1 tsp lemon juice

Grease and line two 22cm round cake tins with baking paper.
Put all ingredients into the TM bowl
Mix for 10 seconds on speed 4
Pour into tins and bake for 20 mins.
Preheat oven to 180C
Tip
I sprinkle with some coconut chips for decoration. This is delicious with a cup of herb tea, very moreish and gluten free to boot!

This sounds like something I'd enjoy & I'd like to make it but have a couple questions please.
It's called a syrup cake but It doesn't seem to have any syrup? Also, does it make two small cakes to eat separately or are they meant to be sandwiched together with something?
